Sean has been a member of the UIC Dining Services team since 2016. Prior to his current position as Executive Chef, Sean held the same position at independent restaurants in Chicago. He most recently oversaw the culinary catering team and operations for Northwestern University on their Chicago campus. At UIC, Sean leads the culinary team for the university's resident dining program. While increasing the quality of food and offerings, he has also increased platforms to represent the growing dietary needs of students. From vegan, wellness, and local to contemporary, rustic and artisan fare, it is his goal to exceed the expectation of traditional campus dining.
